He can tell when Watson is trying not to laugh, and laughing is good, in this case, and it breaks all of Holmes's nervous energy. He bursts into laughter himself, taking the pipe from his mouth and wrapping his arm around his stomach.

"Can't you tell, Watson? Use your powers of deduction," he says when he can finally manage, still shaking with quieter laughter now as he eases back into his seat.
